Hope someone knows or has the CD, as I'd like to upgrade

Spanish-language version of 'Everything I Do ...') is
available on the 1995 V/A compilation Stars in
Spanish (Polydor, 314 525 734-2), which was released
in the USA.

The track is also available on a Mexican V/A compilation
which is also titled Stars in Spanish (SGB
Records, CDID 7378), but is different from the one which
came out in 1995.
