It's actually pretty straightforward, but I believe there is some
misinformation in this thread.

Stock copy #1: stereo & matches the LP version (no harmony vocals)
Stock copy #2: mono and quite possibly a fold-down of the stereo (no
harmony vocals)

Promo copy mono side: dedicated mix with harmony vocals
Promo copy stereo side: same as stock copy #1 and LP version (no
harmony vocals)

Gord's Gold: stereo mix with harmony vocals (to my knowledge
appears nowhere else)

I recommended using the stereo LP/45 version, as that seems to be the
most common version on US 45s. Also, I'm fairly confident the mono is
just a fold-down. I haven't compared them note-for-note, but it's not the
same dedicated mix that appears on the promo 45.

I have the digital 45 of this song which I think also has
the harmony vocals. The harmony vocal versions start with
the opening acoustic guitar more centered vs. the non-
harmony versions where the opening guitar is more in the
left channel.

Am I correct on this, sorta? lol.

Spotify has a single of it on there. Not sure what version it is. I truly like the
Gord's Gold version even though that's not the 45 version.

A poster on SteveHoffman.TV said yesterday:

"I just got a copy of the budget Rhino CD "An Introduction to Gordon Lightfoot" and it contains the harmony vocal version of "If You Could Read My Mind" in stereo."

Which was released 6-29-18...

I don't have the "An Introduction To" CD, but the version of "If You Could Read My Mind" on the "Complete Greatest Hits" CD also has the harmony vocals.
To sum up what I have read in this thread you can find the stereo WITH harmony vocals on these three CD releases (all documented above):

Gord's Gold
Complete Greatest Hits
An Introduction To
Santi Paradoa
